It’s my family’s most requested meal…..pot roast!
And for good reason it is absolutely delicious, tender and it makes the house smell so cozy and wonderful.
Our daughter and son-in-law are just getting home with their brand new baby and so I have made this as their welcome home meal. It’s delicious, nutritious and will be a great welcome home meal. But it is also a most requested recipe from followers, so I am sharing with you here. So if you are looking for a great, cozy, nutritious meal to take to someone, give this pot roast a try!
I normally do not add potatoes into the roast, we like to do mashed potatoes just prior to dinner time. But because I am taking a meal over to their home I’ve decided to put the potatoes in this time. Or, shall I say cram the potatoes in, lol.
RECIPE:
3lb chuck roast
1 large onion
Carrots
Potatoes (I use russet)
Salt/pepper
Olive Oil
few sprigs fresh Thyme & fresh Rosemary
Beef stock (or broth)
INSTRUCTIONS:
Sear the onions & carrots in the olive oil to brown a bit, set those veggies aside, then salt & pepper the roast, and sear roast on both sides. Pour approx 1/4 cup of beef stock in bottom of Dutch oven, and scrape up the stuck, but yummy bits from the bottom of dutch oven. Add back carrots and onion…add in potatoes if would like. (We typically do mashed potatoes, but that’s more work) Pour enough beef stock to cover at least 1/2 way up the side of roast. Add in a few sprigs of fresh Thyme and fresh Rosemary, tuck those down in to the juice.
Place in 275 degree oven for approx 3 hours for a 3lb roast or 4 hours for a bit larger. The roast should be very easy to pull apart when done.
Incredibly tender & delicious! Great meal to take to someone who has just had a baby or recovering from surgery, etc.
